i made what should have been a good sandwich the other day, except that i didn’t have any sharp cheddar on hand. instead i improvised with gruyère. failure. the cheese overpowered everything!
half way through eating the sandwich, i took the cheese off and stuck a couple of slices of the only other cheese i had (sulguni) in there… still not perfect, but much better. i’ll stick to melting gruyère on toast with honey, for now.
p.s. for those of you living in the boston area, find yourself some of this:
it’s locally made chili peach preserves. amazing! it gives a marvelous kick on sandwiches (just use the right cheese – ha). i get mine at city feed and supply in jamaica plain, but i suspect you can find it elsewhere as well.
